ARIZONA: Munch your way across the USA. Selma Lucas, the state of Arizona is now represented. This recipe is from "Capitol Cookies" with recipes from every state & Washington, DC. This recipe was submitted by St. Augustine Catholic Church, Phoenix, AZ, Cynthia Sellens, Chairperson. I personally have not made these so, Selma, if you make them, let us know if they make the state of Arizona proud.

Ingredients
- COOKIE CRUST:
- 1/2 cup sugar
- 2 1/2 cups all purpose flour
- 1/2 teaspoon salt
- 2 sticks butter or margarine, softened
- FILLING:
- 4 - eggs
- 1 1/2 cups karo syrup
- 1 1/2 cups granulated sugar
- 3 tablespoons butter or margarine, softened
- 1 1/2 teaspoons vanilla extract
- 2 1/2 cups pecan halves
How To Make arizona's pecan pie bars

Step 1COOKIE CRUST: Preheat oven to 350. Spray 10x15x1-inch baking dish with Pam. Beat at medium speed the sugar, flour, salt and butter. Beat until mix is fine crumbs. Press into pan. Bake 20 to 30 minutes or until brown. Top with filling.

Step 2FILLING: Beat eggs, corn syrup, sugar, butter and vanilla until blended. Stir in pecans. Pour over hot crust. Bake 25 minutes or until filling is firm around the edges. Cool and cut into squares.
