Makes 24 cookies
Ingredients
- 1/4 cup vegetable oil
- 1/4 cup sugar
- 1 - egg
- 1 teaspoon vanilla
- 1/2 cup unsweetened applesauce
- 1/2 cup whole wheat flour
- 1/2 cup unbleached flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/8 teaspoon cloves
- 1/2 cup rolled oats
- 1/2 cup raisins - dark or golden
How To Make applesauce raisin cookies/diabetic friendly

Step 1Cream the oil and sugar together. Then add the egg and beat until light.

Step 2Next blend in the vanilla and applesauce

Step 3Stir the flours, baking powder, baking soda, cinnamon, cloves, oats, and raisins into the creamed mixture. Blend well.

Step 4Drop cookies onto a lightly oiled baking sheet using a teaspoon. Bake for 10 minutes at 375 degrees. Let cool on a wire rack before serving.
