apple-raisin chews

This was one of my dads favorite chewy cookies. He had a mini food processor and he'd use it all hours of the day and night. It was his favorite retirement pass time, cooking.

Ingredients

  • 3 cups flour
  • 1 teaspoon salt
  • 3 teaspoons baking powder
  • 1 cup shortening
  • 2 cups brown sugar
  • 1 - egg
  • 2 teaspoons vanilla
  • 1/2 cup evaporated milk
  • 1/4 cup orange juice
  • 3 large apples, peeled, finely chopped
  • 1 cup raisins
  • 1 tablespoon orange zest

How To Make apple-raisin chews

  • Step 1
    Pre-heat oven 375 degrees. Grease cookie sheet. Sift flour, salt and baking powder. Set aside.
  • Step 2
    In a food processor, pulse apples and raisins till finely chopped. Set aside.
  • Step 3
    Cream shortening with brown sugar, on low speed until smooth. Add egg and vanilla, mix until combined.
  • Step 4
    On low speed, alternately add flour, milk and orange juice till just combined.
  • Step 5
    Fold in apples, raisins and orange zest. Drop 1/2 teaspoons onto well greased cookie sheet. Bake 12 to 15 min.
