This was one of my dads favorite chewy cookies. He had a mini food processor and he'd use it all hours of the day and night. It was his favorite retirement pass time, cooking.

Ingredients

flour
1 tsp
salt
3 tsp
baking powder
1 c
shortening
2 c
brown sugar
1
egg
2 tsp
vanilla
1/2 c
evaporated milk
1/4 c
orange juice
3 large
apples, peeled, finely chopped
1 c
raisins
1 Tbsp
orange zest

How to Make Apple-Raisin Chews

Step-by-Step

  • 1Pre-heat oven 375 degrees. Grease cookie sheet.
    Sift flour, salt and baking powder. Set aside.
  • 2In a food processor, pulse apples and raisins till finely chopped. Set aside.
  • 3Cream shortening with brown sugar, on low speed until smooth. Add egg and vanilla, mix until combined.
  • 4On low speed, alternately add flour, milk and orange juice till just combined.
  • 5Fold in apples, raisins and orange zest. Drop 1/2 teaspoons onto well greased cookie sheet. Bake 12 to 15 min.
