apple-raisin chews
This was one of my dads favorite chewy cookies. He had a mini food processor and he'd use it all hours of the day and night. It was his favorite retirement pass time, cooking.

Ingredients
- 3 cups flour
- 1 teaspoon salt
- 3 teaspoons baking powder
- 1 cup shortening
- 2 cups brown sugar
- 1 - egg
- 2 teaspoons vanilla
- 1/2 cup evaporated milk
- 1/4 cup orange juice
- 3 large apples, peeled, finely chopped
- 1 cup raisins
- 1 tablespoon orange zest
How To Make apple-raisin chews

Step 1Pre-heat oven 375 degrees. Grease cookie sheet. Sift flour, salt and baking powder. Set aside.

Step 2In a food processor, pulse apples and raisins till finely chopped. Set aside.

Step 3Cream shortening with brown sugar, on low speed until smooth. Add egg and vanilla, mix until combined.

Step 4On low speed, alternately add flour, milk and orange juice till just combined.

Step 5Fold in apples, raisins and orange zest. Drop 1/2 teaspoons onto well greased cookie sheet. Bake 12 to 15 min.
