This was one of my dads favorite chewy cookies. He had a mini food processor and he'd use it all hours of the day and night. It was his favorite retirement pass time, cooking.

Ingredients

  • 3 c
    flour
  • 1 tsp
    salt
  • 3 tsp
    baking powder
  • 1 c
    shortening
  • 2 c
    brown sugar
  • 1
    egg
  • 2 tsp
    vanilla
  • 1/2 c
    evaporated milk
  • 1/4 c
    orange juice
  • 3 large
    apples, peeled, finely chopped
  • 1 c
    raisins
  • 1 Tbsp
    orange zest

How to Make Apple-Raisin Chews

Step-by-Step

  1. Pre-heat oven 375 degrees. Grease cookie sheet.
    Sift flour, salt and baking powder. Set aside.
  2. In a food processor, pulse apples and raisins till finely chopped. Set aside.
  3. Cream shortening with brown sugar, on low speed until smooth. Add egg and vanilla, mix until combined.
  4. On low speed, alternately add flour, milk and orange juice till just combined.
  5. Fold in apples, raisins and orange zest. Drop 1/2 teaspoons onto well greased cookie sheet. Bake 12 to 15 min.
