Makes 66 cookies.
Ingredients
- 1/2 cup (1 stick) margarine or butter, softened
- 1/2 cup plus 3 tablespoons sugar, divided
- 1/2 cup packed brown sugar
- 1 - egg, beaten
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 3 cups apple cinnamon toasted oats cereal, crushed to 1 and 1/4 cups
- 1 teaspoon ground cinnamon
- 1/3 cup apple butter (found in the jelly and jam aisle)

Step 11. Preheat oven to 350 degrees. Lightly grease cookie sheet.

Step 22. Beat margarine, 1/2 cup sugar and brown sugar in bowl until creamy. Add egg. Mix well. Stir in flour and baking soda. Add cereal, stirring until well combined. Combine cinnamon and remaining 3 tablespoons sugar in small bowl.

Step 33. For each cookie, roll 1/2 level tablespoon dough into a ball. Roll ball in cinnamon-sugar mixture. Place on prepared cookie sheet. Press thumb in center of each ball to form a well. Spoon 1/4 to 1/2 teaspoon apple butter into center of each cookie.

Step 44. Bake 10 to 11 minutes or until light browned. let stand at least 1 minute before removing from cookie sheet. Makes 66 cookies.
