apple butter cookies

I've found that whole wheat flour works well when combined with fruit or vegetable purees - like carrot cake, zucchini bread, banana bread, pumpkin loaves, and these cookies. So enjoy using whole grains and eating your sweets!

Ingredients

  • 1/2 cup brown sugar (or xylitol sweetener)
  • 3 tablespoons butter, softened
  • 1/2 cup sorghum
  • 1 - egg
  • 1/2 cup apple butter
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ginger
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup hot water
  • 2 1/2 cups whole wheat flour (approximate)

How To Make apple butter cookies

  • Step 1
    Preheat oven to 375°F.
  • Step 2
    Cream together brown sugar, butter, and sorghum. Add egg and apple butter; beat until well blended.
  • Step 3
    Stir baking soda, salt, ginger, cinnamon and nutmeg into hot water. Stir into creamed mixture, blending thoroughly. Add the flour and mix well.
  • Step 4
    Drop dough from a teaspoon onto ungreased baking sheets. Sprinkle with baker's sugar, or flatten with a glass dipped in granulated sugar.
  • Step 5
    Bake for 10-12 minutes. Cool 5 minutes on pans, then remove to wire rack to finish cooling.
  • Step 6
    If you like, add a little more flour (maybe 1/4 cup) and you can form these into balls and roll in granulated sugar. That's what I did with the ones in the picture.
