almond joy cookies
Someone posted this recipe on Facebook awhile back, and a friend asked me to e-mail it to her. I couldn't find this exact recipe on Just-a-Pinch, so I'm adding to make it easier for her to find the recipe. These cookies have been a big hit at 2 family reunions in the past 3 years.

Makes 5 dozen cookies
Ingredients
- 1/2 cup butter or margarine
- 3/4 cup white sugar
- 3/4 cup brown sugar
- 2 - eggs
- 1-1/2 teaspoon vanilla extract
- 2-1/4 cup flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups chocolate chips
- 1 cup sweetened coconut
- 1 cup almonds, chopped
How To Make almond joy cookies

Step 1Preheat oven to 375. Grease cookie sheets, or place parchment paper on cookie sheets.

Step 2Mix flour, baking soda, and salt. Set aside.

Step 3In large bowl, cream butter and sugars together. Beat in eggs and stir in vanilla.

Step 4Stir in dry ingredients until well mixed, then stir in chocolate chips, coconut, and almonds.

Step 5Drop by rounded tablespoonfuls onto prepared cookie sheets. Bake 8-10 minutes.

Step 6Cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
