Someone posted this recipe on Facebook awhile back, and a friend asked me to e-mail it to her. I couldn't find this exact recipe on Just-a-Pinch, so I'm adding to make it easier for her to find the recipe. These cookies have been a big hit at 2 family reunions in the past 3 years.

  • 1/2 c
    butter or margarine
  • 3/4 c
    white sugar
  • 3/4 c
    brown sugar
  • 2
  • 1-1/2 tsp
    vanilla extract
  • 2-1/4 c
  • 1 tsp
    baking soda
  • 1/2 tsp
  • 2 c
    chocolate chips
  • 1 c
    sweetened coconut
  • 1 c
    almonds, chopped

How to Make Almond Joy Cookies


  1. Preheat oven to 375. Grease cookie sheets, or place parchment paper on cookie sheets.
  2. Mix flour, baking soda, and salt. Set aside.
  3. In large bowl, cream butter and sugars together. Beat in eggs and stir in vanilla.
  4. Stir in dry ingredients until well mixed, then stir in chocolate chips, coconut, and almonds.
  5. Drop by rounded tablespoonfuls onto prepared cookie sheets. Bake 8-10 minutes.
  6. Cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
