Someone posted this recipe on Facebook awhile back, and a friend asked me to e-mail it to her. I couldn't find this exact recipe on Just-a-Pinch, so I'm adding to make it easier for her to find the recipe. These cookies have been a big hit at 2 family reunions in the past 3 years.

Ingredients

  • 1/2 cup butter or margarine
  • 3/4 cup white sugar
  • 3/4 cup brown sugar
  • 2 - eggs
  • 1-1/2 teaspoon vanilla extract
  • 2-1/4 cup flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups chocolate chips
  • 1 cup sweetened coconut
  • 1 cup almonds, chopped

How To Make almond joy cookies

  • Step 1
    Preheat oven to 375. Grease cookie sheets, or place parchment paper on cookie sheets.
  • Step 2
    Mix flour, baking soda, and salt. Set aside.
  • Step 3
    In large bowl, cream butter and sugars together. Beat in eggs and stir in vanilla.
  • Step 4
    Stir in dry ingredients until well mixed, then stir in chocolate chips, coconut, and almonds.
  • Step 5
    Drop by rounded tablespoonfuls onto prepared cookie sheets. Bake 8-10 minutes.
  • Step 6
    Cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
