These have been my son's "birthday cake" ever since he was about 3 years old. The brownies are chewy and chocolately, and best of all, easy to make!

butter, room temperature
2 c
4 Tbsp
cocoa powder (heaping)
eggs, beaten
1 c
all purpose flour
1 c
walnuts, chopped (optional)
1 tsp
vanilla extract


1 - 1 1/2 c
powdered sugar
1 1/2 Tbsp
butter, room temperature
1 1/2 Tbsp
cocoa powder
2 Tbsp
boiling water
1 tsp
vanilla extract

How to Make Zach's Birthday Brownies


  • 1Cream sugar, cocoa and butter.
  • 2Add beaten eggs and vanilla.
  • 3Add flour and fold in walnuts.
  • 4Bake in greased 9x13 pan at 350 degrees for 40-45 minutes. Top will appear underdone (falls in the middle) but DON'T overbake!! Should be moist and chewy.

    While brownies are baking, prepare icing by mixing ingredients together with electric beater.
  • 5Add icing immediately after removing brownies from oven so it will melt into a shiny glaze.
  • 6Let cool and enjoy!
