whole grain sugar free brownies

My husband & boys LOVE brownies, but brownies in the box don't go with our cleaner eating lifestyle, so I came up with these using organic whole grain flours and Stevia or coconut sugar. If you have never used coconut sugar, you should. It is delicious & is much better for you that refined sugar.

Ingredients
- 1/4 cup butter, melted
- 1/4 cup coconut oil (or just 1/2 cup butter)
- 1 cup stevia (or 1/2 cup stevia + 1/2 cup coconut sugar)
- 2 - eggs, beaten
- 1 teaspoon vanilla
- 1/3 cup unsweetened cocoa powder
- 1/4 cup oat flour
- 1/4 cup whole wheat pastry flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
How To Make whole grain sugar free brownies

Step 1Preheat oven to 350 degrees. Grease an 8x8 square baking dish.

Step 2Mix butter, oil, sugar, eggs and vanilla together in large bowl.

Step 3Add cocoa, flours, salt and baking powder. Mix well. Do not over mix. Batter should be slightly lumpy. If you overmix brownies, they come out tough.

Step 4Bake in preheated oven for 25 minutes. Do not overcook.

Step 5TIP - It's always better for brownies to be undercooked, than overcooked. When you overcook them, they get hard and dry.
