- 1 package gelatin, unflavored
- 1/4 cup granular sugar substitute
- 1/3 cup cocoa, unsweetened
- - pinch of salt
- 3 tablespoons bittersweet chocolate chips
- 1/2 teaspoon vanilla extract

Step 1POUR 1/2 CUP OF THE HALF AND HALF INTO A MEASURING CUP. SPRINKLE ONE PACKET OF THE GELATIN ON TOP AND SET ASIDE UNTIL SOFTENED - ABOUT 5 MINUTES.

Step 2COMBINE SUGAR SUBSTITUTE, COCOA POWDER AND SALT IN A MEDIUM SAUCEPAN; WHISK IN THE REST OF THE HALF AND HALF. BRING TO A BOIL OVER MEDIUM HEAT, WHISKING CONSTANTLY. REMOVE FROM HEAT, ADD CHOCOLATE CHIPS AND LET SET FOR 1 MINUTE. WHISK UNTIL SMOOTH.

Step 3ADD GELATIN MIXTURE TO COCOA MIXTURE AND STIR UNTIL DISSOLVED. STIR IN VANILLA AND DIVIDE AMONG 4 SERVING CUPS. COVER EACH WITH PLASTIC WRAP AND CHILL UNTIL FIRM (MINIMUM OF 3 HOURS BUT BETTER OVERNIGHT).
