  • 2 c
    fat free half & half divided
  • 1 pkg
    gelatin, unflavored
  • 1/4 c
    granular sugar substitute
  • 1/3 c
    cocoa, unsweetened
  • ·
    pinch of salt
  • 3 Tbsp
    bittersweet chocolate chips
  • 1/2 tsp
    vanilla extract

How to Make SUGAR FREE CHOCOLATE PUDDING

Step-by-Step

  1. POUR 1/2 CUP OF THE HALF AND HALF INTO A MEASURING CUP. SPRINKLE ONE PACKET OF THE GELATIN ON TOP AND SET ASIDE UNTIL SOFTENED - ABOUT 5 MINUTES.
  2. COMBINE SUGAR SUBSTITUTE, COCOA POWDER AND SALT IN A MEDIUM SAUCEPAN; WHISK IN THE REST OF THE HALF AND HALF. BRING TO A BOIL OVER MEDIUM HEAT, WHISKING CONSTANTLY. REMOVE FROM HEAT, ADD CHOCOLATE CHIPS AND LET SET FOR 1 MINUTE. WHISK UNTIL SMOOTH.
  3. ADD GELATIN MIXTURE TO COCOA MIXTURE AND STIR UNTIL DISSOLVED. STIR IN VANILLA AND DIVIDE AMONG 4 SERVING CUPS. COVER EACH WITH PLASTIC WRAP AND CHILL UNTIL FIRM (MINIMUM OF 3 HOURS BUT BETTER OVERNIGHT).
