pc's microwave rocky road brownie dessert
I had this deliciously decadent dessert last night at a product party, eating it WARM! It was one of the best chocolate desserts I have ever tasted, so I wanted to add the recipe to my JAP account so I can find it again. (Please understand that I am NOT trying to take credit for this recipe! The consultant did it a little differently than the official recipe so I'm posting it her way so I can remember.) Gather your family around a warm dish of this dessert & make some delicious memories. Or just gather some of the "girls" together & hand out spoons. Ice cream is optional. =^..^=

Ingredients
- 1 1/2 sticks (3/4 cup) butter
- 4 ounces unsweetened chocolate, chopped
- 3/4 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup walnut halves, divided (can be toasted first, if desired)
- 1 1/2 cups sugar
- 3 - eggs
- 16 - large marshmallows, snipped in half (or 1 cup miniature marshmallows)
- 20 - milk chocolate kisses, unwrapped

Step 1Cut butter into pieces in a medium microwave-safe mixing bowl. Add the chopped unsweetened chocolate. Microwave uncovered on HIGH for 1-2 minutes, or until mostly melted, stirring every 30 seconds.

Step 2While the chocolate & butter are melting, in a smaller bowl, stir together the flour, baking powder, and salt.

Step 3Coarsely chop 1/2 cup of the walnuts & set aside.

Step 4When the chocolate & butter are melted, remove from microwave and whisk in the sugar and eggs unti smooth. Fold in the flour mixture, then the chopped walnuts.

Step 5Pour batter into a 12 x 9 (or 12 cup square) microwave-safe baker. Microwave, UNCOVERED, on HIGH 5-7 minutes, or until a wooden toothpick inserted in the center comes out clean. Remove from microwave.

Step 6While the brownie is getting done, snip marshmallows in half & unwrap chocolate kisses, if you haven't already done so.

Step 7Top hot brownie with marshmallow halves, chocolate kisses, and the remaining 1/2 cup of walnut halves. (You can chop them or leave them large.) COVER the dish & microwave on HIGH for 1-2 minutes, or until the marshmallows start to soften.

Step 8Remove from microwave and let stand, COVERED, for 5 minutes.

Step 9Spoon onto plates & serve with a scoop of ice cream, if desired. Or hand everyone a spoon & gather around the table! =^..^=

Step 10OVEN DIRECTIONS (to use, if your baker won't fit into your microwave): Preheat oven to 350 degrees F. Bake brownie, UNCOVERED, for 42-46 minutes, or until toothpick into the center comes out clean. Top with marshmallows, chocolate kisses, and walnuts. COVER and bake an additional 5 minutes, or until the marshmallows start to soften. Remove from oven & let stand, COVERED, for 5 minutes.
