Ingredients For pam's peppermint patties

  • 1 lb
    confectioners' sugar
  • 3 Tbsp
    margarine, softened
  • 3 tsp
    peppermint extract , more or less to your liking
  • 1/2 tsp
    vanilla extract
  • 1/4 c
    evaporated milk
  • 12 oz
    semisweet chocolate chips
  • 2 Tbsp
    shortening

How To Make pam's peppermint patties

    Combine the confectioners sugar, butter, and flavorings in a bowl and mix well. Add the evaporated milk and mix until blended

    Shape the mixture into one inch balls. Arrange the balls on a baking sheet lined with wax paper. Chill for 20 minutes. Flatten balls with the bottom of a glass so they resemble patties. Chill for 30 minutes and then freeze for 5 minutes.

    Combine the chocolate chips and shortening in a double boiler. Heat over simmering water until blended, stirring frequently. Dip the patties into the chocolate mixture and arrange on a sheet of waxed paper. Let stand until firm.
