Ingredients

1 lb
confectioners' sugar
3 Tbsp
margarine, softened
3 tsp
peppermint extract , more or less to your liking
1/2 tsp
vanilla extract
1/4 c
evaporated milk
12 oz
semisweet chocolate chips
2 Tbsp
shortening

How to Make Pam's Peppermint Patties

Step-by-Step

  • 1Combine the confectioners sugar, butter, and flavorings in a bowl and mix well. Add the evaporated milk and mix until blended
  • 2Shape the mixture into one inch balls. Arrange the balls on a baking sheet lined with wax paper. Chill for 20 minutes. Flatten balls with the bottom of a glass so they resemble patties. Chill for 30 minutes and then freeze for 5 minutes.
  • 3Combine the chocolate chips and shortening in a double boiler. Heat over simmering water until blended, stirring frequently. Dip the patties into the chocolate mixture and arrange on a sheet of waxed paper. Let stand until firm.
