mini s'mores muffins w/ dark chocolate
This is a version of S'mores cupcakes my mom made way back when I was very young. I saved the recipe and changed a few things and added a few things, but they still taste awesome!

Ingredients
- 1/2 cup hot milk
- 1-1/2 teaspoon espresso powder
- 1/3 cup mini chocoltae chips
- 1 large egg
- 1 tablespoon oil, i used canola
- 1-1/2 teaspoon vanilla
- 1 cup flour
- 1/4 cup unsweetened cocoa powder
- 3 tablespoons graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup light brown sugar
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1-1/2 cup marshmallow fluff
- - a handful of mini chocolate c hips and about 1-1/2 cups cinnamon toast crunch cereal
How To Make mini s'mores muffins w/ dark chocolate

Step 1heat oven to 350. Line muffin cups w/ mini cupcake liners. In lg bowl pour hot milk over the espresso powder and 1/3 cup chocolate chips, allowing them to soften. Stir until smooth.

Step 2Add the egg, oil and 1 tsp vanilla and stir until combined. In another bowl whisk together the flour, cocoa powder, graham cracker crumbs, both sugars, baking powder and baking soda. Add the dry ingredients to the wet ingredients. Stir until just combined.

Step 3Fill the cupcake liners 3/4 full. Bake for about 10-12 mins or until centers spring back when lightly pressed. In medium bowl, combine the marshmallow fluff, 1/2 tsp vanilla and 2 tbsp boiling water. Stir until smooth. When cupcakes are cooled, dip them in the marshmallow mix. Sprinkle w/ some mini chocolate chips. Place 1 square of the cereal on top of each muffin.
