Super moist and they freeze really well too. This recipe makes 2 dozen brownies.

4 eggs
1 1/2 cups vegetable oil
2 cups sugar
2 cups flour
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
1/4 cup unsweetened cocoa powder
1 tsp vanilla
3 cups zucchini shredded
1 cup chopped pecans or walnuts

How to Make Lisa's Zucchini Brownies


  • 1Preheat oven to 350.
  • 2Cream together eggs, oil, and sugar. In a separate bowl , mix together flour, baking soda, cinnamon, salt, and cocoa. Slowly add the flour mixture to your sugar mixture, mix well. Add vanilla, zucchini and nuts and mix well. Spread into a 15x10 jelly roll pan. Bake for 30 min or till centre is set.
    Once cool you can frost them with Vanilla Frosting or a Cream Cheese Frosting
