Super moist and they freeze really well too. This recipe makes 2 dozen brownies.

Ingredients For lisa's zucchini brownies

  • 4 eggs
  • 1 1/2 cups vegetable oil
  • 2 cups sugar
  • 2 cups flour
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp salt
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp vanilla
  • 3 cups zucchini shredded
  • 1 cup chopped pecans or walnuts

How To Make lisa's zucchini brownies

    Preheat oven to 350.
  • 2
    Cream together eggs, oil, and sugar. In a separate bowl , mix together flour, baking soda, cinnamon, salt, and cocoa. Slowly add the flour mixture to your sugar mixture, mix well. Add vanilla, zucchini and nuts and mix well. Spread into a 15x10 jelly roll pan. Bake for 30 min or till centre is set. Once cool you can frost them with Vanilla Frosting or a Cream Cheese Frosting Enjoy
