These muffins are so good and good for you w/ just a little chocolate thrown in for a a great flavor boost.

Ingredients

egg
1-1/3 c
mashed ripe bananas
3/4 c
packed, light brown sugar
1/3 c
applesauce
1 tsp
vanilla
1 c
flour
1/2 tsp
baking soda
2 tsp
baking powder
1/2 tsp
salt
1 tsp
cinnamon
1 c
quick-cooking oats
1 c
semisweet chocolate chips
1/2 c
chopped walnuts, or pecans

How to Make Healthy morning muffins

Step-by-Step

  • 1Heat oven to 350. Spray a 12-cup muffin pan w/ cooking spray. In lg bowl, combine egg, banana, brown sugar, applesauce and vanilla, mix well.
  • 2In another bowl, combine flour, baking soda, baking powder, salt and cinnamon. Stir flour mix and oats into banana mix. Mix well.
  • 3Fold in chocolate chips and nuts. Pour into muffin cups 3/4-full. Bake 15-20 mins, or until a toothpick inserted in center comes out clean.
