These muffins are so good and good for you w/ just a little chocolate thrown in for a a great flavor boost.

  • 1 large
  • 1-1/3 c
    mashed ripe bananas
  • 3/4 c
    packed, light brown sugar
  • 1/3 c
  • 1 tsp
  • 1 c
  • 1/2 tsp
    baking soda
  • 2 tsp
    baking powder
  • 1/2 tsp
  • 1 tsp
  • 1 c
    quick-cooking oats
  • 1 c
    semisweet chocolate chips
  • 1/2 c
    chopped walnuts, or pecans

How to Make Healthy morning muffins


  1. Heat oven to 350. Spray a 12-cup muffin pan w/ cooking spray. In lg bowl, combine egg, banana, brown sugar, applesauce and vanilla, mix well.
  2. In another bowl, combine flour, baking soda, baking powder, salt and cinnamon. Stir flour mix and oats into banana mix. Mix well.
  3. Fold in chocolate chips and nuts. Pour into muffin cups 3/4-full. Bake 15-20 mins, or until a toothpick inserted in center comes out clean.
