These muffins are so good and good for you w/ just a little chocolate thrown in for a a great flavor boost.

Ingredients

  • 1 large egg
  • 1-1/3 cup mashed ripe bananas
  • 3/4 cup packed, light brown sugar
  • 1/3 cup applesauce
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup quick-cooking oats
  • 1 cup semisweet chocolate chips
  • 1/2 cup chopped walnuts, or pecans

How To Make healthy morning muffins

  • Step 1
    Heat oven to 350. Spray a 12-cup muffin pan w/ cooking spray. In lg bowl, combine egg, banana, brown sugar, applesauce and vanilla, mix well.
  • Step 2
    In another bowl, combine flour, baking soda, baking powder, salt and cinnamon. Stir flour mix and oats into banana mix. Mix well.
  • Step 3
    Fold in chocolate chips and nuts. Pour into muffin cups 3/4-full. Bake 15-20 mins, or until a toothpick inserted in center comes out clean.
