Ingredients

  • 1 stick butter, unsalted
  • 1 cup oatmeal, uncooked
  • 1 cup brown sugar
  • 3/4 cup all purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/2 cup chopped cashews,salted
  • - filling:
  • 1/2 stick butter
  • 12 ounces semi-sweet baking chocolate,chopped
  • 1/2 cup brown sugar, light
  • 1/2 cup all purpose flour
  • 1 tablespoon instant coffee powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon chipotle chili powder
  • 1/4 teaspoon salt
  • 3 large eggs

How To Make fudge bars with cashew topping

  • Step 1
    Melt the stick of butter.Combine together the flour, oatmeal,brown sugar,baking powder and soda,and salt.Stir in melted butter.Set 1 1/4 cup this mixture aside,mix with the cashew nuts.
  • Step 2
    Press remaining oatmeal mixture into 9 inch square pan.Bake in preheat 325 degrees oven for 10 minutes.Cool.
  • Step 3
    For the filling:combine together the flour,brown sugar,instant coffee powder,cinnamon,chili powder and salt.Set aside.
  • Step 4
    Melt the chocolate and butter,stirring all the time.Whisk in eggs,one at the time.Stir in flour mixture.
  • Step 5
    Pour filling over cool crust and sprinkle with reserved oatmeal cashew mixture.Bake 35 minutes.Do not over bake.Cool and cut into squares.Enjoy it is delicious.
