    butter, unsalted
  • 1 c
    oatmeal, uncooked
  • 1 c
    brown sugar
  • 3/4 c
    all purpose flour
  • 1/4 tsp
    baking soda
  • 1/4 tsp
    baking powder
  • 1/8 tsp
  • 1/2 c
    chopped cashews,salted
  • ·
  • 1/2 stick
  • 12 oz
    semi-sweet baking chocolate,chopped
  • 1/2 c
    brown sugar, light
  • 1/2 c
    all purpose flour
  • 1 Tbsp
    instant coffee powder
  • 1/2 tsp
  • 1/4 tsp
    chipotle chili powder
  • 1/4 tsp
  • 3 large

How to Make Fudge Bars with Cashew Topping


  1. Melt the stick of butter.Combine together the flour, oatmeal,brown sugar,baking powder and soda,and salt.Stir in melted butter.Set 1 1/4 cup this mixture aside,mix with the cashew nuts.
  2. Press remaining oatmeal mixture into 9 inch square pan.Bake in preheat 325 degrees oven for 10 minutes.Cool.
  3. For the filling:combine together the flour,brown sugar,instant coffee powder,cinnamon,chili powder and salt.Set aside.
  4. Melt the chocolate and butter,stirring all the time.Whisk in eggs,one at the time.Stir in flour mixture.
  5. Pour filling over cool crust and sprinkle with reserved oatmeal cashew mixture.Bake 35 minutes.Do not over bake.Cool and cut into squares.Enjoy it is delicious.
