- 1 stick butter, unsalted
- 1 cup oatmeal, uncooked
- 1 cup brown sugar
- 3/4 cup all purpose flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/8 teaspoon salt
- 1/2 cup chopped cashews,salted
- - filling:
- 1/2 stick butter
- 12 ounces semi-sweet baking chocolate,chopped
- 1/2 cup brown sugar, light
- 1/2 cup all purpose flour
- 1 tablespoon instant coffee powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon chipotle chili powder
- 1/4 teaspoon salt
- 3 large eggs
How To Make fudge bars with cashew topping

Step 1Melt the stick of butter.Combine together the flour, oatmeal,brown sugar,baking powder and soda,and salt.Stir in melted butter.Set 1 1/4 cup this mixture aside,mix with the cashew nuts.

Step 2Press remaining oatmeal mixture into 9 inch square pan.Bake in preheat 325 degrees oven for 10 minutes.Cool.

Step 3For the filling:combine together the flour,brown sugar,instant coffee powder,cinnamon,chili powder and salt.Set aside.

Step 4Melt the chocolate and butter,stirring all the time.Whisk in eggs,one at the time.Stir in flour mixture.

Step 5Pour filling over cool crust and sprinkle with reserved oatmeal cashew mixture.Bake 35 minutes.Do not over bake.Cool and cut into squares.Enjoy it is delicious.
