elizabeth's quick chocolate chip banana bread

This is a variant on my mom's original recipe---and, I had some leftover chocolate chips, & threw them in! I love to bake--even if I don't feel great. I'm battling SII, B-Cell, Follicular NHL (Jan. '10). Currently in "Stable Remission" (8/5/11), & I have 3 more chemotherapy infusions.

Ingredients

  • 1/2 cup butter (softened in microwave a few seconds.)
  • 1 cup sugar
  • 2 - eggs
  • 3 - bananas (crushed)
  • 2 cups flour
  • 2 teaspoons baking soda
  • pinch salt
  • - nestle' mini chocolate chips (@ 2 handfuls)
  • 1/4 cup nuts (chopped, optional!)

How To Make elizabeth's quick chocolate chip banana bread

  • Step 1
    Preheat oven to 350 degrees. Cream butter and sugar; add eggs. Beat well. Add bananas and flour, baking soda, salt and nuts. Throw in chocolate chips at the END of mixing! Pour in greased & floured, loaf pan. Bake at 350°F for @1 hour. (Check for doneness @ 45 minutes. Be careful NOT to overbake!) Check with toothpick, & if some chocolate is on it, put if in a couple more spots. **IF you have an inbetween amount of bananas (ex: 5), I adjusted the amounts accordingly---ex. 3/4 c. Butter, 1 1/4 c. Sugar, I did 2 tsp. Baking Soda). Basically, I tack on @ 1/4 more. If you have (6) bananas, just double recipe accordingly. --->If you have smaller loaf pans, CHECK time doneness with toothpick @ 30 minutes. They bake FASTER than typical large pans. I prefer Nestle MINI Chocolate Chips, because they are lighter, and don't usually float to the bottom of the pan during baking. And, it distributes the chocolate throughout the bread.
