eamon & rae's oatmeal applesauce muffins

I was baking with my nephew (bff's son) and we modified an existing recipe for these and came up with an even yummier version. I have been baking them once a month since. As a side note, I have experimented with differing amounts of each flour, and half wheat and half white seems to be the best tasting, best consistancy combination. Also, regular chocolate chips can be substituted for the white; we prefer the white.

Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup brown sugar, firmly packed
  • 1 - egg
  • 1/2 cup wheat flour
  • 1/2 cup all purpose flour
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup applesauce, unsweetened
  • 1 cup oats, uncooked (old-fashioned)
  • 3/4 cup vanilla or white chocolate chips
  • 3/4 cup walnut pieces

How To Make eamon & rae's oatmeal applesauce muffins

  • Step 1
    Cream butter, add in sugar, and mix well. Add in egg, mix well.
  • Step 2
    Combine flours, cinnamon, salt, baking powder and soda.
  • Step 3
    Add flour mixture alternately with applesauce to the creamed mixture.
  • Step 4
    Mix in oats, walnuts, and white chocolate chips.
  • Step 5
    Spoon into muffin cups (1/2 to 2/3 full, for smaller muffins). Bake at 350 degrees for 20-30 minutes (time depends on each persons oven).
  • Step 6
    Cool a bit, peel off muffin paper, eat, enjoy!
