Ingredients

  • 1 - chocolate, unsweetened squares
  • 1/4 cup evaporated milk
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon artificial liquid sweetener
  • 1 package vanilla or chocolate artificially sweetened pudding powder
  • 8 teaspoons finely chopped nuts (optional)

How To Make diabetic friendly easter fudge

  • Step 1
    Melt chocolate in top of double boiler over boiling water.
  • Step 2
    Add evaporated milk and pudding mix. Cook for 2 - 3 minutes, then add vanilla and sweetener.
  • Step 3
    Spread on small foil pie pan or plate. Chill. Cut into 8 pieces.
  • Step 4
    Form into egg-shaped balls and then roll lightly in pudding powder or chopped nuts.
