creamy cocoa cheesecake

This is a most requested recipe for birthdays in my house! I have started to use GF cookies for the crust since I have gone gluten free...and no one can tell the difference! I entered the GF version in our county fair's bake off and won first prize!

Ingredients

  • 1 cup graham cracker crumbs, reg or chocolate or gf chocolate cookie
  • 3 tablespoons sugar
  • 3 tablespoons butter, melted
  • 2 8oz packages cream cheese
  • 3/4 cup sugar
  • 1/3 cup cocoa powder
  • 1 teaspoon vanilla
  • 2 - eggs
  • 1 cup sour cream
  • 2 tablespoons sugar
  • 1 teaspoon vanilla
  • - garnishes as desired

How To Make creamy cocoa cheesecake

  • Step 1
    Combine crumbs. 3 T sugar and butter. Press into 8,9 or 10" spring form pan. (depending on how thick you like your cheese cake!) I like the 9". Go up a little bit of the side.
  • Step 2
    Combine cream cheese, 3/4C sugar, cocoa and 1 tsp vanilla. Mix until well blended.
  • Step 3
    Blend in eggs and pour into crust.
  • Step 4
    Bake at 375F for 30 minutes.
  • Step 5
    Combine sour cream, 2T sugar and 1t vanilla. Carefully spread over cake once it comes out of the oven.
  • Step 6
    Turn oven up to 425F and bake topped cheesecake for another 10 minutes. Loosen pan, cool and remove sides. Cool. Garnish as desired and keep chilled.
