creamy cocoa cheesecake
This is a most requested recipe for birthdays in my house! I have started to use GF cookies for the crust since I have gone gluten free...and no one can tell the difference! I entered the GF version in our county fair's bake off and won first prize!

Ingredients
- 1 cup graham cracker crumbs, reg or chocolate or gf chocolate cookie
- 3 tablespoons sugar
- 3 tablespoons butter, melted
- 2 8oz packages cream cheese
- 3/4 cup sugar
- 1/3 cup cocoa powder
- 1 teaspoon vanilla
- 2 - eggs
- 1 cup sour cream
- 2 tablespoons sugar
- 1 teaspoon vanilla
- - garnishes as desired
How To Make creamy cocoa cheesecake

Step 1Combine crumbs. 3 T sugar and butter. Press into 8,9 or 10" spring form pan. (depending on how thick you like your cheese cake!) I like the 9". Go up a little bit of the side.

Step 2Combine cream cheese, 3/4C sugar, cocoa and 1 tsp vanilla. Mix until well blended.

Step 3Blend in eggs and pour into crust.

Step 4Bake at 375F for 30 minutes.

Step 5Combine sour cream, 2T sugar and 1t vanilla. Carefully spread over cake once it comes out of the oven.

Step 6Turn oven up to 425F and bake topped cheesecake for another 10 minutes. Loosen pan, cool and remove sides. Cool. Garnish as desired and keep chilled.
