Ingredients

  • ·
    non-stick cooking spray
  • 15 oz
    black beans, canned - rinsed and drained (1 1/2 cups)
  • 1 c
    canola oil
  • 4
    eggs
  • 1/2 c
    cocoa, unsweetened
  • 3/4 c
    sugar
  • 2 tsp
    instant coffee powder
  • 2 tsp
    vanilla
  • 1/2 c
    semi-sweet baking chocolate chunks, melted
  • 2/3 c
    whole wheat flour
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/2 c
    semi-sweet chocolate chips

How to Make Chocolate Chunk Brownies

Step-by-Step

  1. Preheat oven to 350 degrees. Line a 8x8x2 inch baking pan with foil, allowing edges of foil to extend over edges of pan; coat lightly with cooking spray. Set aside.
  2. Combine the black beans, oil, eggs, cocoa powder and sugar in a food processor. Cover and process until well combined and smooth, about 1 minute. Add coffee granules, vanilla, melted chocolate, flour, baking powder, and salt. Cover and process until smooth, about 30 seconds. Stir in the 1/2 cup chocolate chunks
  3. Pour batter into prepared baking pan, spreading evenly. Bake about 35 minutes or until a toothpick inserted in the center comes out with just a few moist crumbs. Transfer to a wire rack to cool. Use foil to lift brownies from pan. Serve with coffee or latte, if desired.
