This is from Publix Family Style magazine. A neat way to get more fiber into your diet! I have modified this to suit our tastes. The picture is from the Family Style magazine.

Ingredients

  • - non-stick cooking spray
  • 15 ounces black beans, canned - rinsed and drained (1 1/2 cups)
  • 1 cup canola oil
  • 4 - eggs
  • 1/2 cup cocoa, unsweetened
  • 3/4 cup sugar
  • 2 teaspoons instant coffee powder
  • 2 teaspoons vanilla
  • 1/2 cup semi-sweet baking chocolate chunks, melted
  • 2/3 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips

How To Make chocolate chunk brownies

  • Step 1
    Preheat oven to 350 degrees. Line a 8x8x2 inch baking pan with foil, allowing edges of foil to extend over edges of pan; coat lightly with cooking spray. Set aside.
  • Step 2
    Combine the black beans, oil, eggs, cocoa powder and sugar in a food processor. Cover and process until well combined and smooth, about 1 minute. Add coffee granules, vanilla, melted chocolate, flour, baking powder, and salt. Cover and process until smooth, about 30 seconds. Stir in the 1/2 cup chocolate chunks
  • Step 3
    Pour batter into prepared baking pan, spreading evenly. Bake about 35 minutes or until a toothpick inserted in the center comes out with just a few moist crumbs. Transfer to a wire rack to cool. Use foil to lift brownies from pan. Serve with coffee or latte, if desired.
