winter strawberries

My holiday cookie tray would be complete without these little morsels. They could be call candied strawberries...they add a burst of color to any holiday cookie tray and so good and rich!!

Ingredients

  • 1 1/2 cups finely chopped pecans
  • 1 1/2 cups coconut
  • 3 (3oz.) boxes strawberry gelatin
  • 1 can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/2 cup red sugar
  • 1 package almonds, slivered
  • - green food coloring

How To Make winter strawberries

  • Step 1
    In a Ziploc sandwich bag empty the small pkg. of slivered almonds, add several drops of green food coloring ..zip the bag shut and move the rub the bag around until all the almonds are coated with the food coloring then spread them onto a paper towel in a single even layer...pat dry.
  • Step 2
    In a medium bowl all the ingredients except the almonds and red sugar...it will be thick and sticky...cover bowl with plastic wrap and chill for at least 1 hour.
  • Step 3
    By the teaspoonful shape the chilled mixture into strawberries being careful not to make them to big...place on a parchment or wax paper lined tray cover with plastic and chill again for at least an hour.
  • Step 4
    Roll each strawberry in the red sugar and put a slivered almond in the top to resemble the look of a strawberry...keep refrigerated until ready to serve.
