How to Make Vanilla Crack
- Oven to 350 degrees, rack in middle position.
- Line 10x15x1" cookie sheet with heavy duty foil. Spray foil with PAM. Cover completely with single layer of crackers, salt side up. Set aside to cook topping.
- Combine butter, sugar and vanilla in heavy saucepan. Bring to full boil over med-high heat, stirring constantly (it will have breaking bubbles all over surface of pan). Boil for exactly 5 min, stirring constantly. If it sputters too much, reduce heat. If it starts to loose the boil, increase heat. JUST DO NOT STOP STIRRING!!!
- Pour mixture over crackers as evenly as you can. Sprinkle nut pieces over top. Slide pan in oven and bake 10 min. Remove pan from oven, cool on wire rack. When completely cool, peel off foil and break into random sized pieces.
