Because all microwaves are different in heating, you may have to adjust the timing by seconds or a minute. If it turns out too dark, decrease time on each step a bit. If it doesn't end up golden and doesn't break easily, increase the time a bit on each step.

Once you have figured out the timing on YOUR microwave, be sure and write it down and use that timing easily from then on.

Ingredients

  • 1 c
    granulated sugar
  • 1/2 c
    light corn syrup
  • 1 3/4 c
    salted peanuts with or without skins on
  • 1 tsp
    butter
  • 1 tsp
    pure vanilla extract
  • 1 tsp
    baking soda

How to Make Speedy Microwave Peanut Brittle

Step-by-Step

  1. In a 4 cup or larger microwave-safe glass bowl, stir sugar and corn syrup and microwave on high 4 minutes.
  2. Stir in peanuts and microwave on high 4 minutes.
  3. Stir in butter and vanilla and microwave on high 1 minute.
  4. Quickly fold in baking soda and pour out onto baking sheet that has been sprayed lightly with non-stick cooking spray and spread quickly with metal spatula or knife that has been sprayed with non-stick cooking spray.
  5. Allow to cool completely.
  6. Break into pieces.
