Who knew a potato mashed with confectioner's sugar would be so runny...yet when worked long enough would produce a wonderful candy? My grandmother made potato candy for most holidays and to date, hers was the best!

Ingredients
- 2-3 medium potatoes
- 1 1/2 - 2 pounds confectioner's sugar
- 1 teaspoon vanilla
- 2 tablespoons butter
- - peanut butter
How To Make potato candy

Step 1Cook potatoes, peel and mash; cool to lukewarm or able to handle. Add confectioner's sugar (gradually), vanilla, and butter; blending well. The sugar amount will vary according to size of potatoes and consistency will be very runny. Dough will stiffen as you work it. Work it with a fork until quite stiff but not too dry.

Step 2Roll out on waxed paper or board, lightly sprinkle with powdered sugar to a rectangle shape. Spread 1/4 inch thick peanut butter and roll up like a jelly roll. Slice and place cut side down on platter. May be eaten immediately or keep in freezer for some time.
