This is one of the beat microwave candy to make. It's nutty, and crunchy and makes good gifts for frinds, or family.

1 c
light corn syrup
1 c
pistachio's toasted
1 c
sweetened drie cranberries
3 Tbsp
butter cut into pieces
1 tsp
baking soda
1 tsp
vanilla extract

How to Make Pistachio - Cranberry Brittle


  • 1Stir together sugar and corn syrup in a large microwave safe bowl. cover with plastic wrap and microwave on high for 4 minutes.
  • 2uncover and microwave on high for 7-8 minutes more or until mixture is light golden brown. stir in pistachio and cranberries, microwave on high for 1 minute, or just until mixture returns to a boil.
  • 3using oven mits remove bowl from microwave, QUICKLY stir in butter, soda, and vanilla. ( candy will foam )
  • 4quickly pour candy mixture onto a well buttered baking sheet, or pan covered with parchment paper, spreding the candy to the edges of the pan , using a buttered metal spoon or spatulas. cool completely, break candy into pieces and store in an airtight contaier.
