1 clight corn syrup

How to Make Pistachio - Cranberry Brittle
- Stir together sugar and corn syrup in a large microwave safe bowl. cover with plastic wrap and microwave on high for 4 minutes.
- uncover and microwave on high for 7-8 minutes more or until mixture is light golden brown. stir in pistachio and cranberries, microwave on high for 1 minute, or just until mixture returns to a boil.
- using oven mits remove bowl from microwave, QUICKLY stir in butter, soda, and vanilla. ( candy will foam )
- quickly pour candy mixture onto a well buttered baking sheet, or pan covered with parchment paper, spreding the candy to the edges of the pan , using a buttered metal spoon or spatulas. cool completely, break candy into pieces and store in an airtight contaier.
