This is a delicious protein packed, yet low fat candy recipe. You have to taste it to believe it. And its fun to ask people to guess the secret ingredient.

Ingredients

  • 1 cup cooked pinto beans, unseasoned
  • 3/4 cup cocoa
  • 1/2 cup melted butter
  • 1 tablespoon vanilla (yes 1 tablespoon)
  • 2 pounds powdered sugar
  • 1 pinch salt (do not add if beans have any salt in them)
  • 1/2 cup chopped pecans

How To Make pinto bean fudge

  • Step 1
    Mash the beans. Mix them with the margarine, cocoa and vanilla. Stir in the sugar and pecans.
  • Step 2
    Butter a 9 by 13 inch pan and spread the bean mixture in this. Put into the refrigerator and chill thoroughly. Cut into squares, serve.
