Peanut Butter Balls

My friend's make these every year for a cookie exchange we have at Christmas time. They call them boomerangs, which I'd never heard of before. They are my most favorite holiday treat of all the cookies I get/make. I decided to make them this year in the shape of eggs for Easter! So yummy!

  • 1 stick
    butter, softened
  • 2 c
    creamy peanut butter
  • 1 lb
    confectioners' sugar
  • 3 c
    rice crispies
  • 8 oz
    semisweet chocolate
  • 6 oz
    milk chocolate
  • 1/4
    slab paraffin wax (1 square)

How to Make Peanut Butter Balls


  1. In large bowl, mix butter, and confectioner's sugar. Add rice crispies and mix well by hand. Mixture will be crumbly.
  2. Shape mixture into 1 inch balls. (Pictured are eggs for Easter)
  3. Melt chocolate and wax on top of double boiler. (I don't have one, so I use a stainless steel bowl on top of boiling water... very carefully!)
  4. Dip peanut butter balls in chocolate with a fork and cool on wax paper.
  5. Refrigerate until ready to serve.
