My friend's make these every year for a cookie exchange we have at Christmas time. They call them boomerangs, which I'd never heard of before. They are my most favorite holiday treat of all the cookies I get/make. I decided to make them this year in the shape of eggs for Easter! So yummy!

Ingredients

  • 1 stick butter, softened
  • 2 cups creamy peanut butter
  • 1 pound confectioners' sugar
  • 3 cups rice crispies
  • 8 ounces semisweet chocolate
  • 6 ounces milk chocolate
  • 1/4 - slab paraffin wax (1 square)

How To Make peanut butter balls

  • Step 1
    In large bowl, mix butter, and confectioner's sugar. Add rice crispies and mix well by hand. Mixture will be crumbly.
  • Step 2
    Shape mixture into 1 inch balls. (Pictured are eggs for Easter)
  • Step 3
    Melt chocolate and wax on top of double boiler. (I don't have one, so I use a stainless steel bowl on top of boiling water... very carefully!)
  • Step 4
    Dip peanut butter balls in chocolate with a fork and cool on wax paper.
  • Step 5
    Refrigerate until ready to serve.
