peanut butter balls
My friend's make these every year for a cookie exchange we have at Christmas time. They call them boomerangs, which I'd never heard of before. They are my most favorite holiday treat of all the cookies I get/make. I decided to make them this year in the shape of eggs for Easter! So yummy!

Ingredients
- 1 stick butter, softened
- 2 cups creamy peanut butter
- 1 pound confectioners' sugar
- 3 cups rice crispies
- 8 ounces semisweet chocolate
- 6 ounces milk chocolate
- 1/4 - slab paraffin wax (1 square)
How To Make peanut butter balls

Step 1In large bowl, mix butter, and confectioner's sugar. Add rice crispies and mix well by hand. Mixture will be crumbly.

Step 2Shape mixture into 1 inch balls. (Pictured are eggs for Easter)

Step 3Melt chocolate and wax on top of double boiler. (I don't have one, so I use a stainless steel bowl on top of boiling water... very carefully!)

Step 4Dip peanut butter balls in chocolate with a fork and cool on wax paper.

Step 5Refrigerate until ready to serve.
