3 c
granulated sugar
1-1/4 c
water
1/2 c
light corn syrup
3 Tbsp
butter
1 lb
spanish peanuts (not salted)
1 tsp
baking soda
1 Tbsp
water
1-1/2 tsp
vanilla extract

How to Make PEANUT BRITTLE (SALLYE)

Step-by-Step

  • 1Butter 2 large cookie sheets and set aside
  • 2Combine sugar, 1-1/4 c water and corn syrup in large cast iron skillet or heavy saucepan

    Bring to boil over medium heat, stirring constantly
  • 3When mixture is boiling, STOP STIRRING

    Boil mixture until candy thermometer registers 270 degrees

    Remove from heat
  • 4Add butter and peanuts

    Return to heat and continue cooking until thermometer registers 300 degrees

    (or a teaspoonful of syrup will separate into brittle threads when dropped in cold water)

    Remove from heat once again
  • 5Mix baking soda, the 1 tablespoon water and vanilla into hot candy

    When bubbles susbside, pour candy onto the prepared cookie sheets as thinly as possible
  • 6Cool, then break into pieces

    Store in airtight container with wax or parchment paper between layers
