Ingredients
- 3 cups granulated sugar
- 1-1/4 cup water
- 1/2 cup light corn syrup
- 3 tablespoons butter
- 1 pound spanish peanuts (not salted)
- 1 teaspoon baking soda
- 1 tablespoon water
- 1-1/2 teaspoon vanilla extract
How To Make peanut brittle (sallye)

Step 1Butter 2 large cookie sheets and set aside

Step 2Combine sugar, 1-1/4 c water and corn syrup in large cast iron skillet or heavy saucepan Bring to boil over medium heat, stirring constantly

Step 3When mixture is boiling, STOP STIRRING Boil mixture until candy thermometer registers 270 degrees Remove from heat

Step 4Add butter and peanuts Return to heat and continue cooking until thermometer registers 300 degrees (or a teaspoonful of syrup will separate into brittle threads when dropped in cold water) Remove from heat once again

Step 5Mix baking soda, the 1 tablespoon water and vanilla into hot candy When bubbles susbside, pour candy onto the prepared cookie sheets as thinly as possible

Step 6Cool, then break into pieces Store in airtight container with wax or parchment paper between layers
