What would a holiday be without a little peanut brittle?

Ingredients

  • 3 cups granulated sugar
  • 1-1/4 cup water
  • 1/2 cup light corn syrup
  • 3 tablespoons butter
  • 1 pound spanish peanuts (not salted)
  • 1 teaspoon baking soda
  • 1 tablespoon water
  • 1-1/2 teaspoon vanilla extract

How To Make peanut brittle (sallye)

  • Step 1
    Butter 2 large cookie sheets and set aside
  • Step 2
    Combine sugar, 1-1/4 c water and corn syrup in large cast iron skillet or heavy saucepan Bring to boil over medium heat, stirring constantly
  • Step 3
    When mixture is boiling, STOP STIRRING Boil mixture until candy thermometer registers 270 degrees Remove from heat
  • Step 4
    Add butter and peanuts Return to heat and continue cooking until thermometer registers 300 degrees (or a teaspoonful of syrup will separate into brittle threads when dropped in cold water) Remove from heat once again
  • Step 5
    Mix baking soda, the 1 tablespoon water and vanilla into hot candy When bubbles susbside, pour candy onto the prepared cookie sheets as thinly as possible
  • Step 6
    Cool, then break into pieces Store in airtight container with wax or parchment paper between layers
