norma's surar-free fudge

I sure wish that they had sugar substitue sweeters back when my Dad was alive. He was a diabetic and loved his chocolates. Found this the other day and thought I'd share it with those here on JAP that might need a sugar-free sweet treat. For a sweet alternative to sugar-loaded treats, this fudge can't be beat.This fudge is full of rich chocolate flavor and nuts. Pecan halves make a pretty garnish also.

Ingredients

  • 1/4 cup diet margarine
  • 2 ounces unsweetened baking chocolate
  • 24 packages equal sweetener or other brand equales ( one cup )
  • 1 teaspoon vanilla extract
  • 1 package (8 ounce) reduced calorie cream cheese, softened
  • 1/2 cup chopped pecan halves
  • garnich: - four dozen pecan halves

How To Make norma's surar-free fudge

  • Step 1
    Line an 8 inch square pan with aluminum foil, extending foil over 2 sides of pan; lightly grease foil and set aside.
  • Step 2
    Place chcolate and margarine in a sauce pan and place over low to med heat and stir constantly until melted. Watch not to burn.
  • Step 3
    Remove from heat and stir in sweetener and vanilla.
  • Step 4
    Place cream cheese in a mixing bowl and add chocolate mixture. Beat until smooth.
  • Step 5
    Stir in chopped nuts and spread into prepared pan.
  • Step 6
    Refrigerate until firm.
  • Step 7
    Use ends of foil to lift fudge from pan.
  • Step 8
    Cut into 1 inch squares and garnich if desired.
  • Step 9
    Store in an airtight container in refrigerator.
