irish cream fudge

This is probably the easiest and tastiest fudge I've ever made. You better make 2 batches as it disappears quite quickly. When, or should I say IF, I get my camera working I'll post a picture. For those of you who don't know, I do have a great Irish Cream recipe posted here.

Ingredients

  • 2 packages (12 oz @) milk chocolate chips
  • 1 package (12 oz) semi sweet chocolate chips
  • 2 jars (7 oz @) marshmallow cream
  • 2 teaspoons vanilla
  • 4 1/2 cups sugar
  • 1 can (12 oz) evaporated milk
  • 1 cup butter
  • 2 cups chopped nuts (optional)
  • 2/3 cup irish cream

How To Make irish cream fudge

  • Step 1
    In a large bowl combine chips, marshmallow cream, vanilla, Irish Cream and nuts. Put to the side.
  • Step 2
    In a sauce pan combine sugar, milk and butter. Bring to a gentle boil over med heat, cook slowly stirring constantly for 10 minutes. Pay careful attention as you don't want it to burn.
  • Step 3
    Pour into the bowl with the marshmallow mixture and stir by hand slowly until all is blended well. Pour into pan which has been rubbed/coated with butter. Chill until set.
