healthycoconut oil peanut butter fudge(my version)
You can find the recipe for coconut oil peanut butter fudge all over the web. I've made it and I like it. But...I thought I could improve on it! My version is still healthy and very low in sugar, but I think it tastes better than the standard version. I've added a little butter and a little raw sugar to give it more of a traditional taste. Ingredients
- 1/4 cup butter
- 1/4 cup natural sugar(sucanat or turbinado)
- 1 tablespoon maple syrup or honey
- 3/4 cup coconut oil*
- 1/2 teaspoon vanilla
- 1/2 cup natural peanut butter

Step 1melt butter in saucepan and add sugar and syrup or honey. Bring to a boil, reduce heat and boil gently for about 2 min. Remove from heat and stir in coconut oil and vanilla. Add peanut butter and blend well. (You may want to use a food processor or immersion blender to get the ingredients to really come together. Otherwise just whisk the living daylights out of it!) Pour into a buttered 8x8 pan and place in refrigerator until set up. Cut in small squares. Store in fridge.

Step 2*The best option is extra virgin coconut oil. However, your fudge will have a coconut-y taste if you use it. If that's a problem for you, you can use a more refined oil like Spectrum or Luanna that have a more neutral taste.
