Ingredients
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/4 cup water
- 1/4 teaspoon ground Himalayan pink salt
- 1/2 cup light corn syrup aka white corn syrup
- 4 tablespoons butter, cubed and room temperature
- 1 1/4 cups unsalted dry roasted peanuts
- 1 teaspoon baking soda, sifted
- 1/2 teaspoon pure vanilla extract
How To Make grandma's peanut brittle

Step 1Line a rimmed 10 x 15-inch baking sheet with a silicone mat or grease a baking sheet and place parchment paper - butter the paper. Transfer to a 170 degree F oven while making the brittle.

Step 2In a medium heavy-bottomed saucepan over medium heat, add sugars, water, salt, and corn syrup.

Step 3Using a wooden spoon, stir until nicely blended and the sugars are dissolved.

Step 4Bring the mixture to a gentle boil, stirring occasionally, brushing the sides of the pot with water.

Step 5Attach a candy thermometer on the side of the pot, making sure it’s submerged in the liquid and doesn’t touch the bottom of the saucepan.

Step 6Continue cooking until the mixture reaches 250 degrees F, about 8 to 10 minutes.

Step 7Add butter and stir until melted.

Step 8When the mixture reaches 280 degrees F, about 15 minutes, stir in the peanuts.

Step 9Cook, stirring constantly for about 10 minutes or until the temperature reads between 305 degrees F to 310 degrees F.

Step 10Remove from the heat and immediately add baking soda plus pure vanilla extract; stir vigorously – don’t overdo it.

Step 11Without waiting, pour the mixture onto the warmed, prepared baking sheet. Quickly spread out the mixture evenly.

Step 12Allow to cool completely, about 1 hour.

Step 13Peel off the brittle from the silicone mat or the parchment paper and break into pieces. Store in an airtight container for 4 weeks.
