easy peanut butter fudge with saltines
Yep, saltines. I was a little skeptical but I gave it a try, and it was so easy. Very tasty. It doesn't have the consistency of fudge made with marshmallow but it is still good. I hope you give it a try. You can also stir in chocolate chips during step 3. Others have tried this recipe using different kinds of butter (such as almond butter) and Nutella. Have fun. It is a very versatile recipe.

- 2 cups granulated sugar
- 2 tablespoons butter
- 1/2 cup milk
- 1 cup peanut butter
- 4 ounces saltines, crushed (30 crackers)
- 1 teaspoon vanilla extract

Step 1Place the sugar, butter, and milk in a saucepan. Heat on medium until it starts to boil. Stir occasionally.

Step 2Once it starts to boil, boil for 1 minute only. Remove from heat. Be very careful as the liquid will be extremely hot. If it is lukewarm, you didn't bring it to a boil.

Step 3Stir in peanut butter, crushed saltines, and vanilla extract. To crush the saltines stick them in a plastic storage bag and roll a rolling pin over them. The key word here is crushed. You want them fine not in chunks.

Step 4Mix well.

Step 5Pour into a greased 8 x 8 pan and chill.

Step 6Cut into bite-size pieces.
