This is my favorite fudge. I have been making it for over 35 years. I can't have the holidays without it.

method Stove Top
yield 36 squares

Ingredients

  • 3 cups sugar
  • 2/3 cup cocoa, unsweetened
  • 1/8 teaspoon salt
  • 1 1/2 cups evaporated milk
  • 1/4 cup margarine
  • 1 teaspoon vanilla extract
  • 1 1/2 cups pecans, in pieces

How To Make cocoa fudge

  • Step 1
    Combine all ingredients in medium size pan.
  • Step 2
    Bring to boil continue cooking till soft ball stage. 234 degree soft ball stage.
  • Step 3
    Stirring ocassionaly to keep from burning.
  • Step 4
    Remove from heat add butter,vanilla and pecans.
  • Step 5
    Do not stir for 3-5 minutes
  • Step 6
    Stir and pour in buttered pan
  • Step 7
    cool then cut in squares
