My mother made these every year for Christmas. She would make them and freeze them thinking they would last until Christmas, FYI - they are GREAT frozen. Just ask all 6 of us kids!!

The peanut butter filling is smooth, creamy and just melts in your mouth. Maraschino cherries add a lovely cherry flavor while the coconut gives a bit of crunch to every bite. The chocolate coating is perfection. These easy peanut butter balls will be a delicious addition to a dessert table.

Ingredients For christmas peanut butter coconut cherry balls
- BALLS

1 stickbutter (softened)

1 1/3 cpeanut butter (smooth or crunchy)

4 cpowdered sugar
-
24maraschino cherries (chopped fine)

2 ccoconut
- DIPPING CHOCOLATE

6 ozchocolate chips (milk, semi-sweet or dark, your choice)

6 Tbspparaffin
How To Make christmas peanut butter coconut cherry balls

1Using a mixer, combine butter, peanut butter, powdered sugar, maraschino cherries, and coconut.

2Roll in very small balls.

3Put in freezer for several hours or preferably overnight.

4Melt in a double boiler 6 oz chocolate chips and 6 tbsp paraffin.

5Dip frozen balls in and drain over waxed paper on a rack.

6Can double dip if you want. I usually double the cherry mixture and the chips mixture making enough for dipping a double batch. Enjoy!
