betty's choc-mint truffles
A recipe perfect for children to make! Choc-Mint truffles with no cooking or heating required. I use chocolate covered chocolate sandwich cookies filled with a mint cream. Oreos would work too, but the addition of mint essence will be needed. I make these for birthday presents for friends and school teachers. **Cooking time is chilling time.

Ingredients
- - 2 x 7 ounce (200g) packet of chocolate coated, chocolate and mint cookies (or use oreos)
- - 1 cup dessicated coconut
- - 1 tin condensed milk
- - 1/4 cup cocoa powder
- - if using oreos, add 1 tablespoon mint essence
- - 2 cups chocolate vermicelli, for rolling in
How To Make betty's choc-mint truffles

Step 1Using a food processor. Blitz the cookies in 2 or 3 batches and pour the crumbs into a large bowl. Meanwhile, put the chocolate vermicelli in a bowl for rolling in.

Step 2Pour the coconut, condensed milk, cocoa and mint essence (if using oreos) in with the crumbs. Stir well to combine.

Step 3Use wet hands to to roll heaped teaspoonfuls for mixture into a ball and roll in the chocolate vermicelli. Place on a large tray and pop into the fridge for an hour.
