"almond joy" candy(gluten free,refined sugar free)

I've been experimenting with coming up with some Christmas cookie/candy ideas that will work for those in my family with dietary restrictions. These turned out GOOD!! Took them to my Mom's on Sunday and she couldn't quit eating them! And they couldn't be simpler!

Ingredients

  • COCONUT CANDY
  • 2 cups unsweetened coconut
  • 1/2 cup finely ground almonds
  • 1/4 cup honey or agave nectar
  • 1 - single-serve packet of stevia(could also just use a bit more honey)
  • 3 tablespoons coconut cream(the thick stuff that separates from the watery stuff in the can of full-fat coconut milk)
  • 2 tablespoons coconut oil
  • CHOCOLATE DRIZZLE
  • 2 tablespoons coconut oil
  • 2 tablespoons cocoa
  • 2 - single serve packets of stevia
  • 1 tablespoon honey or agave
  • 1/4 teaspoon vanilla
  • - sliced or slivered almonds-enough for one per piece of candy

How To Make "almond joy" candy(gluten free,refined sugar free)

  • Step 1
    Put all of the coconut candy ingredients into the bowl of a food processor and blend into a paste-like consistency.
  • Step 2
    Roll the mixture into small(i in.) balls and place on parchment or wax paper lined baking sheet. Press a slivered or sliced almond into the top of each. Place in the freezer while you make the chocolate drizzle
  • Step 3
    Combine the drizzle ingredients in a small saucepan and heat on med-low until coconut oil is melted, whisking to combine well.
  • Step 4
    Put the chocolate mixture into a small zipper bag, snip off a small piece of one corner, and squeeze ribbons of the mixture over the candies. Pop back in the freezer to firm up the chocolate(only takes a few min.), then place in a container and store in the fridge.
