Ingredients For zucchini cake

2 mdzucchini (grated on big holes on grater)

3 lgeggs

200 gcaster sugar

1/2 colive oil

350 gcontinental flour

15 gbaking powder

1 tspcinnamon powder

1 canfruit salad in juice(strain )

1 smamount of extra unsalted butter

50 gextra continental flour

1 bagvanilla sugar (8 g )

25 gextra vanilla sugar

25 gextra unsalted butter
How To Make zucchini cake

1Beat eggs and sugar in a bowl with an electric mixer until light and fluffy.Slowly pour in 1/3 of oil and add 1/3 of flour and still mix.Repeat this until you use all oil and flour,then add baking powder,zucchini and lightly fold in,now with spatula.

2Grease 29 cm diameter round baking pan 3 cm high with unsalted butter and dust all over with flour(bottom and sides)Pour the mixture,dust with cinnamon and add the fruit and sprinkle with streusel.Put into preheated oven at 170 C and bake about 35-40 minutes or until nice and golden.

3Streusel: 50 g continental flour,1 vanilla sugar,25 g caster sugar and 25 g unsalted butter. put all ingredients into a small bowl and with your finger mix all together,make a crumbs.
