zelda's fresh pear cake

I like pears but they seem so hard in the grocery store. I decided that I would use fresh pears in this homemade cake. It is both light and moist, spicey yet pear-y, and altogether remarkable. It keeps well but I warn you that it doesn't last to long.I made this up and I hope you like it.

Ingredients

  • 2 cups sugar
  • 3 large eggs, well beaten
  • 1 1/2 cups cooking oil,
  • 3 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 2 teaspoons cinnamon
  • 3 cups thinly sliced pears, cored and peeled
  • 1/2 cup golden raisins
  • CONFECTIONER'S SUGAR GLAZE
  • 1 1/4 cups sifted confectioner's sugar
  • 2-4 tablespoons milk

  • Step 1
    Cake: Combine sugar, eggs, and oil. Beat well. Combine flour, baking soda, and salt.Add to sugar mixture, 1 cup at a time, mixing well after each addition. Stir in vanilla, cinnamon, Pears, and raisins. Turn into wellgreased 10 inch Bundt pan. Bake at 350 degrees for 1 hour Remove from pan and allow to cool.Pour Confectioner's sugar glaze on top. Glaze: Combine sugar and milk, blending until smooth.
