September 19th is International Talk Like a Pirate Day invented by my friend, Mark Summers (aka Cap'n Slappy) and another friend of his. I thought a little rum took this apple cake to the next level.Yo Ho Ho and a Bottle of Rum. Arrrrrrr!

Ingredients For yo ho ho apple cake
- FOR THE CAKE

1 cwhite sugar

1 cbrown sugar

1/2 cbutter, softened

1 Tbsprum

1 tspvanilla

2 lgeggs

1 cbuttermilk or sour milk

2 1/2 cflour

1 tspsoda
-
1/2 tspsalt

2 tspcinnamon

3 to 4 cpeeled, cored and chopped apples
- FOR THE TOPPING

1/4 cchilled butter
-
1/4 cbrown sugar
-
1/4 cflour
-
1/4 coatmeal
How To Make yo ho ho apple cake

1Heat oven to 350 degrees. Mix sugars, butter, eggs, rum and vanilla together until well combined. Mix together the dry ingredients in a separate bowl

2Starting with the dry ingredients add 1/3 of the dry ingredients and mix until blended with the sugar/butter mixture. Add 1/2 the buttermilk until mixed in and stop the blender and scrape the bowl. Add 1/3 of the dry ingredients and then the other 1/2 of the buttermilk and the last of dry ingredients blending well in between each addition. Add chopped apples and stir in by hand. Pour into a greased 9x13 pan.

3For the topping, cut the butter into the sugar, flour and oatmeal with a pastry blender. Sprinkle on top of the cake batter. Bake at 350 degrees for 45 minutes. Serve warm with whipping cream.
