Layer cake made in a one layer pan! Turns out looking pretty fancy and nice for a party. Although cooking method is baking, keep in mind you will be using the stove top. Cooking time includes the filling and frosting cook time.

Ingredients For white cake with lemon filling

  • WHITE CAKE
  • 1/2 c
    shortening
  • 1 1/2 c
    sugar
  • 2 1/2 c
    cake flour, sifted
  • 2 tsp
    baking powder
  • 1/8 tsp
    salt
  • 1 c
    milk
  • 1 tsp
    vanilla extract
  • 1/2 tsp
    lemon extract
  • 4
    egg whites
  • LEMON FILLING
  • 1 1/2 c
    hot water
  • 1/2 c
    sugar
  • 1/3 c
    lemon juice
  • 4
    egg yolks
  • 3 Tbsp
    cornstarch
  • SEVEN MINUTE FROSTING
  • 1 1/2 c
    sugar
  • 1/3 c
    water
  • 2
    egg whites
  • 1 tsp
    light corn syrup

How To Make white cake with lemon filling

    For the cake: Cream shortening; gradually add sugar, beating well at medium speed of an electric mixer.

    Combine the flour baking powder, and salt; stir well. Add to the creamed mixture alternately with the milk, beginning and ending with flour mixiture. Stir in the flavorings.

    Beat the egg whites (at room temp) at high speed until stiff peaks form. Gently fold into the flour mixture.

    Pour the batter into a greased and floured 13x9x2 inch baking pan. Bake at 325 degrees for 25 to 30 minutes or until a wooden pick inserted in the center comes out clean. Let cool in the pan 10 minutes; remove from pan, and let cool eompletely on a wire rack.

    Split the cake in half horizontally; spread lemon filling betweebn the layers. Spread frosting on top and sides of cake.

    For the lemon filling: Combine all ingredients in the top of a double boiler; bring water in the bottom of the double boiler to a boil. Reduce heat to low; cook, stirring constantly, until mixture is thickened. Let cool.

    For the frosting: Combine all ingredients in the top of a double boiler; place over boiling water. Beat at high speed of an electric mixer for 7 minutes or until stiff peaks form.
