Layer cake made in a one layer pan! Turns out looking pretty fancy and nice for a party. Although cooking method is baking, keep in mind you will be using the stove top. Cooking time includes the filling and frosting cook time.

WHITE CAKE

1/2 c
shortening
1 1/2 c
sugar
2 1/2 c
cake flour, sifted
2 tsp
baking powder
1/8 tsp
salt
1 c
milk
1 tsp
vanilla extract
1/2 tsp
lemon extract
4
egg whites

LEMON FILLING

1 1/2 c
hot water
1/2 c
sugar
1/3 c
lemon juice
4
egg yolks
3 Tbsp
cornstarch

SEVEN MINUTE FROSTING

1 1/2 c
sugar
1/3 c
water
2
egg whites
1 tsp
light corn syrup

How to Make White Cake with Lemon Filling

Step-by-Step

  • 1For the cake: Cream shortening; gradually add sugar, beating well at medium speed of an electric mixer.
  • 2Combine the flour baking powder, and salt; stir well. Add to the creamed mixture alternately with the milk, beginning and ending with flour mixiture. Stir in the flavorings.
  • 3Beat the egg whites (at room temp) at high speed until stiff peaks form. Gently fold into the flour mixture.
  • 4Pour the batter into a greased and floured 13x9x2 inch baking pan. Bake at 325 degrees for 25 to 30 minutes or until a wooden pick inserted in the center comes out clean. Let cool in the pan 10 minutes; remove from pan, and let cool eompletely on a wire rack.
  • 5Split the cake in half horizontally; spread lemon filling betweebn the layers. Spread frosting on top and sides of cake.
  • 6For the lemon filling: Combine all ingredients in the top of a double boiler; bring water in the bottom of the double boiler to a boil. Reduce heat to low; cook, stirring constantly, until mixture is thickened. Let cool.
  • 7For the frosting: Combine all ingredients in the top of a double boiler; place over boiling water. Beat at high speed of an electric mixer for 7 minutes or until stiff peaks form.
