I love this recipe so much, especially in the summer. Top your cakes and cupcakes with this "lick the bowl clean" frosting and then grate some fresh lemon and orange for a beautiful finishing touch to the top.

Makes enough for a two layer cake.
Ingredients
- 1 teaspoon fresh lemon peel
- 3 tablespoons butter
- 3 cups confectioners' sugar
- 2 tablespoons fresh lemon juice
- 1 tablespoon water
- 1 dash salt
How To Make fresh lemon frosting

Step 1Add lemon peel to butter. Mix well.

Step 2Add half of sugar to creamed mixture gradually, blending well after each addition.

Step 3Combine lemon juice and water. Add to creamed mixture alternately with remaining sugar until it reaches desired consistency. Add salt.

Step 4Beat until smooth. Top with additional grated lemon peel to decorate.
