Ingredients
- 1 1/2 cups all purpose flour
- 3 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon grated lemon zest
- 1 cup vegetable oil
- 1 cup granulated sugar
- 1/2 cup cognac
- 2 cups water
- 1/2 cup dark raisins
- 1/2 cup yellow raisins
- 1 cup chopped walnuts

Step 1Preheat oven to 350F. Grease a 9 x 13-inch baking pan.

Step 2Mix flour, baking powder, baking soda, cinnamon and lemon zest together.

Step 4Mix in remaining ingredients, one at a time, until well blended.

Step 5Spread batter into prepared baking pan.

Step 6Bake 1 hour, or until toothpick inserted comes out clean.

Step 7Cool completely in pan on wire rack. Dust with powdered sugar and cinnamon if desired. Cut into squares and serve.
