A Greek cake popular during Lent. Full of raisins and nuts. You can use all one kind raisin if desired.

Ingredients

1 1/2 c
all purpose flour
3 tsp
baking powder
1 tsp
baking soda
1 tsp
ground cinnamon
1 tsp
grated lemon zest
1 c
vegetable oil
1 c
granulated sugar
1/2 c
cognac
2 c
water
1/2 clove
dark raisins
1/2 c
yellow raisins
1 c
chopped walnuts

How to Make Walnut Cake (Karithopeta)

Step-by-Step

  • 1Preheat oven to 350F. Grease a 9 x 13-inch baking pan.
  • 2Mix flour, baking powder, baking soda, cinnamon and lemon zest together.
  • 3Mix flour, baking powder, baking soda, cinnamon and lemon zest together.
  • 4Mix in remaining ingredients, one at a time, until well blended.
  • 5Spread batter into prepared baking pan.
  • 6Bake 1 hour, or until toothpick inserted comes out clean.
  • 7Cool completely in pan on wire rack. Dust with powdered sugar and cinnamon if desired. Cut into squares and serve.
