This is an all-time favorite in our family. It's been handed down for 3 generations now. It is quick and simple, no mixing bowl required. The cake comes out firm and moist, and can be eaten with or without frosting. This can be modified for a diabetic diet with no change in flavor.

Ingredients
- 1-1/2 cup flour
- 1 cup sugar or sugar substitute
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3 tablespoons cocoa
- 1 teaspoon vanilla
- 2 tablespoons vinegar
- 5 tablespoons oil
- 1 cup water, warm
How To Make wacky cake

Step 1In 8 x 8 pan, mix flour, sugar, baking soda, salt, and cocoa. Make 3 wells, add vanilla, vinegar, and oil. Pour water over all and mix until smooth.

Step 2Bake in 350 degree oven for 30 minutes or until knife inserted comes out clean. Cool and frost if desired.
