Ingredients

  • 1 box super moist yellow cake mix
  • 1 small box instant vanilla pudding
  • 1 small box coconut cream instant pudding
  • 1 1/3 cups milk
  • 4 large eggs
  • 1/3 cup oil
  • 8 ounces crushed pineapple, drained (save juice) and dry pineapple good
  • 2 cups angel flake coconut
  • 1 tablespoon vanilla flavoring
  • 1 tablespoon coconut flavoring
  • FROSTING
  • 8 ounces cream cheese, softened well
  • 4 tablespoons butter, softened well
  • 1 tablespoon evaporated milk
  • 1 tablespoon pineapple juice (from above)
  • 16 ounces box powdered sugar, sifted of all lumps
  • 1 1/2 teaspoons vanilla flavoring
  • 1 1/2 teaspoons coconut flavoring

How To Make ultimate coconut cake

  • Step 1
    READ ALL INSTRUCTIONS BEFORE ATTEMPTING THE CAKE, PLEASE.
  • Step 2
    IN A LARGE BOWL, SIFT THE CAKE MIX AND PUDDING MIXES TOGETHER 3 TIMES TO INSURE THERE ARE NO LUMPS.
  • Step 3
    ADD MILK, EGGS, OIL AND MIX UNTIL SMOOTH AND CREAMY.
  • Step 4
    STIR IN PINEAPPLE, FLAVORINGS AND COCONUT. MIX WELL. SPOON INTO 3 GREASED AND FLOURED 9" CAKE PANS. BAKE AT 350 DEGREES FOR 30 MINUTES.
  • Step 5
    WHILE LAYERS ARE WARM, NOT HOT, REMOVE FROM PANS AND POKE HOLES IN TOP. SPOON GENEROUS AMOUNTS OF PINEAPPLE JUICE OVER EACH LAYER.
  • Step 6
    MIX ICING INGREDIENTS IN ORDER LISTED AND SPREAD BETWEEN LAYERS, TOP AND SIDE OF CAKE. SPRINKLE TOP AND SIDES WITH COCONUT.
