gluten free flour(bob's red mill all-purpose baking flour
1 Tbsp
gluten free baking powder
2 tsp
baking soda
2 tsp
cinnamon, ground
1/2 tsp
ground nutmeg
1/2 tsp
ground ginger
2 c
ground raw sugar
1 can(s)
crushed pineapple, drained
eggs, room temperature
2 tsp
organic vanilla extract
2 c
grated carrots
1 1/2 c
chopped walnuts. optional
1 c
organic shredded coconut
1/2 c
organic applesauce
1 1/2 tsp
xanthan gum

How to Make Tyra's Heavenly Gluten-Free Carrot Cake


  • 1Pre-heat oven to 350 degrees
    Spray two round 8" cake pans with cooking spray
  • 2Mix flour, can than gum, baking powder, baking soda,cinnamon,ginger, and nutmeg in a bowl whisk together until thoroughly combined. Set aside
  • 3Beat the sugar, pineapple and eggs in a large bowl until smooth. Ad vanilla and remix thoroughly
  • 4Slowly add flour mix into wet ingredients, beat at medium speed until mixed well, fold in carrots, walnuts, and coconut
  • 5Pour batter evenly into the prepared cake pans.
    Bake for 50 minutes or until toothpick inserted comes out clean
  • 6Cool on wire racks, once cool
    Frost cake with gluten free cream cheese frosting
