Ingredients
- 3 cups gluten free one to one baking flour
- 1 tablespoon gluten free baking powder
- 2 teaspoons baking soda
- 2 teaspoons cinnamon, ground
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 2 cups ground raw sugar
- 1……20oz can crushed pineapple, drained
- 4 - eggs, room temperature
- 2 teaspoons organic vanilla extract
- 2 cups grated carrots
- 1 1/2 cups chopped walnuts. optional
- 1 cup organic shredded coconut
- 1/2 cup organic applesauce
How To Make tyra's heavenly gluten-free carrot cake

Step 1Pre-heat oven to 350 degrees Spray two round 8" cake pans with cooking spray

Step 2Mix flour, baking powder, baking soda,cinnamon,ginger, and nutmeg in a bowl whisk together until thoroughly combined. Set aside

Step 3Beat the sugar, and eggs together then add pineapple in a large bowl until smooth. Add vanilla and remix thoroughly

Step 4Slowly add flour mix into wet ingredients, beat at medium speed until mixed well, fold in carrots, walnuts, and coconut

Step 5Pour batter evenly into the prepared cake pans. Bake for 50 minutes or until toothpick inserted comes out clean

Step 6Cool on wire racks, once cool Frost cake with gluten free cream cheese frosting
