two ingredient orange cake

This is one of many of this type of recipe, most are with pineapple..and oh so delicious..I just wanted to show you that you can use any chopped up canned fruit, like peaches, pears,apricots,grapefruit sections...etc. This is a great and quick recipe....the fruit goes to the bottom...so when you serve it treat it like an upside down cake and serve it with the fruit on top with whipped cream or ice cream.. Note: if you use fresh fruit diced up, be sure to use 3/4 cup of some juice too.

Ingredients

  • 1 box angel food cake mix,use dry
  • 15 ounces can mandarin orange slices,cut up

How To Make two ingredient orange cake

  • Step 1
    Heat oven to 350^. Spray the bottom only of a 9x13 inch glass baking dish;set aside. Empty orange sliced in small bowl;and using kitchen scissors cut up the orange slices.
  • Step 2
    Empty the cake mix into a medium glass bowl. Next empty the cut up orange pieces and all the juice in with the dry cake mix(it will foam a bit-that's good). Stir with a spatula to get all the cake mix incorporated;Scooping from bottom to top: if desired add 1 teaspoon of your favorite extract(I used rum extract)
  • Step 3
    Pour mixture into the prepared pan. Bake for 30 minutes then place on cooling rack..delicious with a scoop of ice cream or whipped topping.
