My mother-in law, Helen always made this. She gave me the recipe a long, long time ago. She wrote it on a piece of paper. I still have it in my recipe box. It's kind of funny, she always told me there was something different she did to it that wasn't on the recipe. I never wrote it down, and I could never remember what it was. She passed away a few years ago. I made this the other day and found the icing wasn't sweet enough, so I added confectioners sugar. I can't help but wonder if that was what she added to it. Thanks Helen, you taught me a lot of good things over the years.

How to Make Twinkie Cake

Step-by-Step

  • 1Bake cake according to directions. Let cool completely.
  • 2Gather all ingredients for frosting.
  • 3Frosting: After cake has cooled, cook the flour and milk together over med low heat until thick. This takes me several minutes because I don't want to scorch the mixture. I just take it on and off the heat stirring constantly. It gets pretty thick, kind of like pudding. Let cool.
  • 4Add the cooled flour and milk mixture with the rest of the frosting ingredients. Beat until fluffy. This takes a few minutes. This isn't sweet enough for us, so I add 4 T confectioners sugar while beating. This is optional. Cut cake in half, add all the frosting on top of this half , then place the other half of the cake on top of the icing.
  • 5Keep cake refrigerated and covered. Enjoy!
  • 6If you want your filling really white, use clear vanilla. If you don't have it, the regular is fine.
