This is an old favourite recipe. I can't believe I haven't already posted it over here. I hope that you will enjoy this creamy cheesecake that is not overly sweet. Equally lovely served plain or with fresh fruit, berries or whipped cream. Please note: The cookie crumbs can easily be changed in this recipe to accommodate personal taste preferences.

Ingredients For triple citrus cheesecake
- COOKIE CRUST

1 1/4 coreo cookie crumbs

1/4 cbutter, melted
- CAKE BATTER

24 ozcream cheese
-
1 cwhite sugar
-
1/2 tsppure vanilla extract

1/2 tsppure almond extract

1 Tbsplemon juice
-
1 Tbsplime juice
-
1 Tbsporange juice
-
1 Tbsplemon zest
-
1 Tbsplime zest
-
1 Tbsporange zest

3 lgeggs
How To Make triple citrus cheesecake

1Preheat oven to 350 degrees F.

2To make the crust, combine the cookie crumbs and the melted butter in a bowl and mix, making sure it is well blended. Press the cookie crumbs into the bottom of an non greased 9-inch spring form pan.

3To make the cake, beat the cream cheese, sugar, vanilla, and almond extracts in a large bowl on medium speed until well blended, creamy and smooth.

4Add the juices and fruit zests and mix really well.

5Add your eggs, one at a time, just until blended and then pour over the prepared crust.

6Bake in a 350 degree F oven for 45 - 50 minutes, or until the centre is almost set. Cool completely, then place in fridge overnight.

7When ready to serve, garnish with fresh berries and whip cream or your choice of fresh fruit.
