This actually is a christmas cookie recipe from Thuringia, where it is called "peat" because it looks like peat. It's a very rich cookie which strongly resembles a brownie.

How to Make Thuringian Brownies


  • 1Melt chocolate with 4 T water over low heat, over double boiler or in the microwave, if using.
  • 2Separate eggs, beat egg whites stiff.
  • 3Preheat oven to 350°F.
  • 4Cream together sugar, egg yolks and butter. Stir in melted chocolate, add flour and baking powder.
  • 5Fold in stiff egg whites.
  • 6Spread on cookie sheet, about 1 inch thick, and bake for about 25-30 minutes. Cube while still warm.
